Braised Peas, Lettuce and Green Onions















Braised Peas, Lettuce and Green Onions

1 tablespoon unsalted butter
8 green onions or scallions (white and light green parts), halved lengthwize
1 1/3 cups frozen green peas
1 medium head hydroponic lettuce, leaves separated, I used Bibb
1/4 cup low sodium chicken broth
kosher salt and freshly ground pepper
1 tablespoon chopped fresh mint
1 tablespoon creme fraiche

Melt the butter in a large saute pan over medium heat. Add the green onions and cook, stirring occasionally, until they begin to soften, 2 to 3 minutes. Add the peas and lettuce and continue to cook, sotting with tongs, until the lettuce begins to wilt, 2 minutes more. Add the broth and a pinch of salt and pepper. Stir well and bring to a simmer.
Reduce the heat to medium low, cover, and simmer until the peas are just tender, 3 to 4 minutes. Remove the lid and add the mint and creme fraiche. Stir well and simmer another two minutes. Season to taste with salt and pepper and serve.
