Vegetable-Ground Beef Casserole
















Vegetable-Ground Beef Casserole

2 large baking potatoes, peeled and sliced
2 cups cabbage, shredded
3 carrots, peeled and sliced
1 medium onion, thinly sliced
2 stalks celery, sliced
salt and pepper to taste
1 pound ground chuck
1 egg
1/2 cup ketchup
1/2 cup dry bread crumbs
salt and pepper
garlic powder
cayenne
1 can diced tomatoes, drained

Layer vegetables in order on list. Sprinkle with salt and pepper to taste.
Mix together ground chuck, egg, ketchup, bread crumbs and seasonings to taste. Drop in clumps over top of vegetables. Top with drained tomatoes.
Cover and bake 2 hours at 350 degrees. Uncover and let brown before serving...about 15 minutes.

Option: Sprinkle 1/2 to 1 cup grated sharp cheddar cheese over top after uncovering and let brown.
