Warm Goat Cheese in Phyllo

French dressing:
1/4 cup extra virgin olive oil
1 tablespoon champagne wine vinegar
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon sugar
1/8 teaspoon salt
1/8 teaspoon pepper
1/16 teaspoon dry mustard
1 dash paprika
1 tablespoon finely minced shallot

4 sheets phyllo dough, thawed
2 tablespoons butter, melted
1 tablespoon dry bread crumbs
1 3.5 ounce package fresh goat cheese (chevre)
fresh baby salad greens

Combine the dressing ingredients in a jar with a tight-fighting lid. Shake to mix, then chill until ready to serve. Shake to mix just before serving. Keep refrigerated.
Preheat the oven to 375 degrees.
Unroll the sheets of phyllo on a flat surface and cover them with a SLIGHTLY damp towel. Working quickly so the dough doesn't dry out, place one sheet of phyllo on a board, brush lightly with melted butter, and sprinkle lightly with bread crumbs. Place a second sheet of phyllo on top, brush with melted butter, and sprinke with bread crumbs. Continue until you have used 4 sheers stacked up.
Cut the sheets in half crosswise to make 2 rectangles.
Cut the goat cheese in half horizonally, making 2 thin discs. Place each disc in the center of one phyllo rectangle. Starting at one corner, fold the phyllo up over the cheese and continue folding and pleating the phyllo around the cheese, as though you are wrapping a round gift that's tied on top. You will end up with extra phyllo on top; twist the excess into a top-knot. Brush the discs all over with melted butter and place on a sheet pan lined with parchment paper.
Bake for 20 minutes, until the phyllo is lightly browned. Allow to cool for 10 minutes.
While the cheese bakes, place the salad greens in a bowl, and toss with some of the french dressing.
Distribute the salad onto 2 plates and place a warm goat cheese package in the center of each plate. Season with salt and pepper and serve.

This recipe serves two...but it's easy to increase depending on the number of people you are serving.

Note: there is enough dressing to dress at least 4 salads so you will have extra.

Also note: You may prepare the goat cheese bundles ahead of time and chill in the fridge until ready to bake. Allow to come to room temperature for about 30 minutes before baking.
