Saute' of Asparagus, Mushroom and Peas
























Saute' of Asparagus, Mushroom and Peas

8 ounces button mushrooms, wiped clean and sliced
1 1/2 cups asparagus, cut on the diagonal into 1 1/2" pieces
1 cup green peas, frozen, thawed
1/4 cup sliced green onions
1 tablespoon butter
1/2 tablespoon olive oil
salt and pepper, to taste

Melt butter in a saute' pan over medium-high heat; add mushrooms and cook until lightly browned and and their juices have evaporated, about 5 minutes.
Add the olive oil to the pan then add the asparagus; saute' for 3 to 4 minutes. Add the peas and onions and cook until the peas are heated through. Season with salt and pepper. Serve hot.
