Guacamole
Guacamole
2 avocados, ripe...KEEP THE PITS! * see note
1/2 lime
2 tablespoons pickled jalapeno peppers, minced
1 fresh tomato, seeded and chopped
OR
2 tablespoons salsa, any heat (your choice) (2 to 3)
2 tablespoons sour cream
salt and pepper to taste
Cut the avocados in half. Remove pit, and scoop out the pulp; mash avacados slightly. Squeeze the lime over and season with salt and pepper. Stir in remaining ingredients; place the pits down into the guacamole and cover and chill until ready to serve with corn chips or fresh vegetables.
* Putting the pits down into the guacamole helps to keep it stay nice and green. IT REALLY WORKS!
