Ham and Cheese Quiche

















Ham and Cheese Quiche

1 cup flour
1/2 teaspoon salt
6 1/2 tablespoons shorteningwater, to bind

Filling:
3 large eggs
1 cup creamsalt and pepper, to taste
1/8 teaspoon cayenne
1 dash freshly grated nutmeg
1 cup diced ham
1 cup sharp cheddar cheese
1 tablespoon chives, minced

Preheat oven to 375 degrees. Combine flour and salt; cut in shortening. Bind with water. Roll out and put into small ceramic pie dish; crimp edges. Blind bake with foil and beans or pie weights for 8 minutes. Let cool slightly.

Whisk together eggs, cream, salt and pepper, cayenne and nutmeg. Put ham in bottom of pie shell; top with cheese. Pour egg mixture over all. Bake 30 minutes, shielding crust with foil after 20 minutes. Turn down oven to 325 degrees; continue baking another 10 minutes. Let set about 10 minutes before cutting and serving.
