Cheesy Chicken, Brown Rice and Broccoli Casserole






















Cheesy Chicken, Brown Rice and Broccoli Casserole

1 medium chopped onion
4 tablespoons butter or olive oil
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/8 to 1/4 teaspoon cayenne
1 cup milk, regular or low fat
1 cup low sodium chicken broth
3 chicken breasts, cooked and chopped
1 cup brown rice, cooked according to package directions
3 crowns broccoli, cut into florets and steamed till just tender
1 can cream of mushroom soup, regular or low fat
2 cups (8 ounces) sharp cheddar cheese, grated and divided

Melt the butter (or heat the olive oil) in a large skillet over medium heat. Add the onion and cook till tender, about 5 minutes. Add the flour and cook for a minute to cook off the rawness of the flour. Add seasonings, then slowly add the milk and chicken broth; cook and stir till it boils and thickens. Stir in the cooked chicken, rice, broccoli, soup and half the cheese. Combine well and put into a lightly greased 9x13" baking dish. Top with remaining cheese and bake in a 350 degree oven for 30 to 45 minutes or until bubbly.
