White Bean Dip
















White Bean Dip

1 15 ounce can cannellini beans, rinsed and drained
2 cloves garlic, chopped
2 tablespoons fresh lemon juice
1/3 cup extra virgin olive oil
1/4 cup (loosely packed) fresh Italian parsley leaves
salt and pepper, to taste

Place the beans, garlic, lemon juice, oil and parsley in the bowl of a food processor. Pulse until the mixture is coursely chopped. Season with salt and pepper. Transfer mixture to a small bowl. Serve with pita chips, crostini, crackers, or raw vegetables or your choice.
