Mexican Cinnamon Cookies
















Mexican Cinnamon Cookies

1 cup butter, room temperature
1/2 cup confectioner's sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla
1 1/2 cups flour
1 cup confectioner's sugar
1 1/2 teaspoons cinnamon

Preheat oven to 350 degrees.
In a medium bowl, cream together the butter and 1/2 cup of confectioner's sugar until smooth. Stir in vanilla. Combine the flour, 1/2 teaspoon cinnamon, and the salt; stir into the butter mixture to make a stiff dough.
Mix together the remainig confectioner's sugar and cinnamon in a small bowl. Shape dough into 1inch balls and roll in the cinnamon sugar mixture and place on cookie sheets.
Bake for 15 to 20 minutes, or until nicely browned. Cool cookies on wire racks. Store in an airtight container.

Makes about 3 dozen small cookies.
