Irish Soda Bread with Raisins

Irish Soda Bread with Raisins

1 cup white whole-wheat flour, King Arthur
1 cup flour
1/2 cup quick cooking oats
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1/4 cup plus 2 tablespoons sugar
1 cup buttermilk
1 1/2 tablespoons molasses
1 cup golden raisins
1 tablespoon melted butter

Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine the flours, oats, baking soda, salt and sugar. Mix thoroughly and make a well in the center of the dry ingredients.
Pour the buttermilk and molasses into the well; mix until combined. Add the raisins. On a lightly floured surface, knead the dough several times to work in the raisins.
Shape the dough into a round. Transfer to the prepared baking sheet. Use a knife to cut a large X in the top of the loaf.
Bake in preheated oven for 15 minutes, then reduce heat to 325 degrees and bake for another 40-50 minutes. The loaf should be lightly browned. Remove from oven, brush lightly with melted butter and let cool slightly before eating.
