Mini Biscuit Cinnamon Rolls
















Mini Biscuit Cinnamon Rolls

1 cup flour
3/4 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup shortening, well chilled and cut into 1/2 pieces
1/2 cup buttermilk
1 1/2 tablespoons butter, softened
2 tablespoons cinnamon sugar
2/3 cup confectioner's sugar
milk or cream, as needed
1/4 teaspoon vanilla

Blend dry ingredients in a medium bowl. Cut in the shortening until it is small pea sized. Add the buttermilk and stir gently to incorporate. Push the dough out onto a floured surface and knead two or three times. Pat or roll out to a 1/4" thick rectangle.
Spread with softened butter then sprinkle with the cinnamon sugar. Roll up from the long side like a jelly roll. Cut 1/2" slices and place on a lightly greased baking sheet.
Bake in a 425 degree oven for 8 minutes.
Remove from oven and place on a plate. Stir together the sugar, enough milk or cream to make a thick icing and the vanilla. Drop small spoonfuls over the tops of the rolls and enjoy!
