Awesome Crawfish Fettucini






















Awesome Crawfish Fettucini

3 cups whipping cream
1 tablespoon chicken bouillon granules
2 teaspoons chopped garlic
1/4 teaspoon cayenne
1/3 pound smoked ham, diced
1/2 onion, minced
1 pound frozen cooked crawfish, thawed
4 tablespoons fresh parsley, chopped
4 servings fettucine, cooked and drained
3 green onions, sliced

Rinse crawfish well under running water and soak for a while in a little lemon water. Add the garlic, chicken bouillon, and cayenne to the whipping cream; bring to a simmer and reduce to 2 cups. Meanwhile saute the onion and ham in a little oil until light brown (you may need to add a little water from time to time to keep from sticking). Drain crawfish and pat dry; add to the ham mixture. To serve, add the ham crawfish mixture to the sauce along with chopped parsley. Serve over hot fettucini and sprinkle with sliced green onions.
